Vegan Pb&Chocolate Pudding 

I have always been a fan of smooth and creamy chocolate custard or pudding but have not had it in probably over 2 years until I finally satisfied my cravings this week with a new healthified and veganized pudding recipe I made. This pudding recipe is GLUTEN FREE, LACTOSE FREE, SOY FREE, HIGH IN FIBER AND PROTEIN & obv VEGAN!

Peanut butter and chocolate creamy pudding layered one on top of the other and garnished with crunchy toppings for the ultimate decadent bite. Sounds so wonderful and delicious but keep reading to see how easy this recipe actually is and it doesn’t require that much ingredients either.

If you have ever made chia pudding than this is exactly the recipe but we all know the struggle when eating a chia pudding. Chia seeds getting all stuck in your teeth and honestly it never tasted like a pudding to me. But the trick here is to actually blend your regular “chia pudding” using a blender and then it turns out in an actual creamy pudding.

Salted Caramel Smoothie Bowl

Salted caramel oh how fancy it sounds but in reality all you need is 2 simple ingredients to make caramel and turn your smoothie game a nudge.

Main 2 ingredients to create a vegan caramel is dates and water/plant-based milk. That’s it really. From there you can make anything caramelly and delicious including this is super easy and yummy smoothie bowl.

Ingredients:

  • 2-3 pitted dates
  • 1 TBSP flax seeds
  • 1 tsp cinnamon
  • 2-3 frozen bananas
  • 1/2 cup + 1 tbsp plant-based milk

Add your dates, flax seeds and 1 tbsp of milk in your blender. Pulse for few times and then blend on high until you have a smooth like caramel. Add your chopped bananas and 1/2 cup milk. Pulse for 8-10 times until you have a thick ice-cream like consistency. Add tiny bit of milk if it’s to thick and blend on high.

To make this a Chocolate Salted Caramel version you add 1 tbsp unsweetened cocoa powder and tiny bit of milk if needed. Serve in a bowl with your favorite toppings. But it’s really good without anything on top so it’s up to you.

I added fun toppings like: Hemp seeds, cocoa nibs, raw nuts, pumpkin seeds and dried fruits. But again it depends what you have and what you prefer.

I totally agree that better food makes our bodies healthier and better. Eating healthy does not mean brocolli, chicken, rice or oatmeal all day.
